Special training by Jaunault Frederic/Ambassador of Fruits and Vegetables

Mr. Jaunault Frederic, MOF, visited our school on May 14 and gave a special lecture at the Open Campus.
 
Mr. Jaunault is a national best artisan MOF (2011), National Order of Merit (2017), French & European Champion in vegetable and fruit carving competition (2008), and many other awards.
 
He is not affiliated with any particular hotel or restaurant, but rather teaches at hotel and culinary schools, trains participants for international competitions, and works extensively as an event organizer.
 
The reason for his visit to our school was that he was interested in our "Senshu Bishoku Expo" activities, and Mr. Jaunault contacted us to offer a special training.
 
♦Morning session:
Let's get to know the ingredients! Experience harvesting Senshu foodstuffs / Mizunasu, by Nakade Farm
 
In the morning, we visited Nakade Farm in Kaizuka City to learn about "mizu-nasu" and experience harvesting.

Mr. Nakade told us that the harvest ends at the end of September, and that the three months from January to planting are an important period for soil preparation by letting the soil rest.
 
The harvest experience made us understand that food is not a "thing" that is ordered and delivered, but is the result of the daily efforts of the producers.
 
Mr. Jaunault was also surprised at the quality of the water eggplant, which is not available in France.

In Mr. Jaunault words.
 
"We as chefs are always respectful of the producers, because it is only with their polite work that we are able to prepare our dishes." He said.

We learned the attitude of a top chef and a classy human being.

●Afternoon session: Mr. Frédéric Jonneau's demonstration on how to turn fresh ingredients into art.

 
He created a work of art using muskmelons as roses.

Mr. Jaunault said, "I have been working in this field to tell people about my passion and excitement. The work you are aiming for is the best work that can give you joy and inspiration."

And He gave us his warm and powerful words.

He gave the high school students and current students who participated in the event the confidence that there is no wrong path to follow.
