Learn about authentic Baumkuchen

2022.09.05

Hello everyone!
Thank you for visiting DAICHO's blog.

This time I'd like to share with you a class on baumkuchen!

Sweets of trees!?

◎Sweets and annual rings

What do these two keywords bring to mind for you?
Yes, baumkuchen, right?
In German, "baum" means "tree" and "kuchen" means "pastry.

When sliced into round slices, the baumkuchen appears in a pattern that resembles the annual rings of a tree, which is also the origin of its name.
Baumkuchen is one of the most famous German sweets

In Germany, the annual rings of baumkuchen are a proof of the high skill of craftsmen who put in a lot of time and effort.

We had a class directly from Germany, the home of baumkuchen!

In advance, the students learned from a master baker from the German National Baking School Akademie des bayerischen Bäckerhandwerks in Lochum in an online class, and completed their baumkuchen during today's hands-on training!✨

What is a Meister?

In Germany, there is an established program to develop high technical skills to produce "high quality products".
This time, we will take a lesson from the highest rank of this program, [Meister].
To become a Meister, four skills are required.
Technical skill, education skill, management skill, and development skill.

Let's take a look at the actual practical training.

People tend to think that you need an oven to make a round baumkuchen.
DAICHO's teachers do not use the word "can't".
We come up with means to fulfill various customers' requests. This time, we practiced a method that can be made without a dedicated oven.

Beautiful layers like annual rings appear

At DAICHO, we not only offer classes like this one in cooperation with other schools around the world, but we also have a full curriculum that allows students to go directly to France, Italy, and Germany to learn!
